Winterspecial snack




Oliebollen

At New Year’s Eve, the Dutch treat themselves to ‘oliebollen’, which they often make themselves. They are hand size balls and taste a bit like donuts – especially when you put lots of sugar on them! See the recipe below.



Ingredients:
500 grams white flour
Yeast
2 deciliters lukewarm milk
1 egg
150 grams raisins
1 heaped tablespoon mixed candied peel
1 apple (peeled, cored and finely chopped)
The grated rind of half a lemon
A pinch of salt
Oil for deep-frying
Icing sugar



Dissolve the yeast in the lukewarm milk, and mix all the ingredients together in a bowl. Cover and allow rising for one hour in a warm place. Shape the dough into balls using two tablespoons. Fry a few at a time in the hot oil (200 degrees Celsius), until they are golden brown. Remove them from the oil and put them on a piece of kitchen towel to drain off any excess fat. Serve warm and generously decorated with icing sugar. ‘Oliebollen’ taste excellent with champagne!
